2 Prefazione Guardando la platea di Terra Madre, l incontro mondiale tra le comunità del cibo che Slow Food organizza ogni due anni a Torino (a ogni edizione sono stati presenti più di agricoltori, pescatori, nomadi, piccoli artigiani, cuochi e cuoche in rappresentanza di 153 nazioni del mondo), ho rafforzato la mia convinzione che la diversità sia la più grande forza creativa dell uomo, ciò che ci permette di sopravvivere, di adattarci e di sviluppare le nostre identità. L identità, infatti, è una cosa in continua evoluzione che si forma soltanto nello scambio, e si definisce sempre in base alle differenze. Non è, come molti fraintendono, un punto fisso che ha origini molto lontane e la cui purezza va difesa: nel lunghissimo periodo si rivela come il luogo per eccellenza del meticciato e del mutamento. Questa gente della rete di Terra Madre, che ben rappresenta una cospicua parte di diversità umana, non sarebbe così varia e ricca se non avesse sviluppato relazioni complesse non soltanto con altri popoli, ma soprattutto con la biodiversità che la circonda nei territori che abita. Rapporti con la natura che maneggia, coltiva, alleva, con cui convive. Le nostre abitudini, soprattutto alimentari, si sono sviluppate in sintonia con la natura dei vari territori ed essa ha influenzato per millenni i nostri stili di vita. Insieme a razze animali e varietà vegetali abbiamo plasmato la nostra cultura, abbiamo esaltato le nostre capacità, in un rapporto dialettico un tempo fondato sul rispetto e sulla consapevolezza di essere anche noi parte della biodiversità stessa. Il cibo in particolare, rappresenta la nostra connessione più stretta con la biodiversità e ci aiuta a comprendere una parte fondamentale della sua importanza, perché mangiare significa trasformare la natura in cultura. Un processo affascinante e in parte misterioso, che sta alla base della nostra esistenza. E proprio il cibo diventa il mezzo migliore per capire che cosa vuol dire rinunciare alla biodiversità, puntare sull omologazione, ridurre tutto nel nome della produttività, fino a impoverire anche la dimensione della nostra anima. Con la produzione seriale e industriale applicata anche all agricoltura e agli alimenti, abbiamo innescato dei processi di perdita della biodiversità che hanno ridotto notevolmente la varietà di specie e razze di cui ci nutrivamo. Questa non è soltanto la perdita di un importante pezzo di natura, ma è anche la perdita di una parte di noi. Perché spariscono anche le conoscenze legate alla coltivazione, trasformazione, ai ritmi naturali, ai modi di consumo e conservazione. È un patrimonio inestimabile che una volta scomparso ci indebolisce nella nostra capacità di creare, di innovare, di trovare nuovi paradigmi per un futuro che ci appare sempre più incerto. L errore di fondo è stato quello di considerarci esterni alla biodiversità, esterni alla natura. Di pensare che potessimo usufruirne a nostro piacimento come se fosse una risorsa infinita e a nostra completa disposizione, un semplice fattore di produzione, ignorando le connessioni infinite e anche nascoste che tengono insieme il nostro mondo e gli conferiscono senso. Non possiamo perseverare nell errore: bisogna conservare la biodiversità, certo, ma dobbiamo anche re-imparare a rapportarci con essa, per trarne reciproco vantaggio e godimento. Carlo Petrini Presidente Associazione Slow Food Internazionale Presidente Consiglio d Amministrazione dell Università di Scienze Gastronomiche di Pollenzo Preface Looking at the audience of Terra Madre, the world meeting of food communities organized by Slow Food in Turin every two years (more than 6,000 farmers, fishermen, nomads, artisans, and cooks representing 153 countries around the world have been present at each edition), I have strengthened my belief that diversity is the greatest creative power of man, which allows us to survive, to adapt and develop our identity. The identity, in fact, is evolving continuously and is formed only by exchange, and is always defined on differences. It is not, as many misunderstand, a fixed point that has remote origins and whose purity must be defended: in the very long period it reveals itself as the place par excellence of hybridization and change. These people of the Terra Madre network, who represent a large part of human diversity, would not be so varied and rich if they had not developed complex relationships not only with other peoples, but especially with the biodiversity that surrounds the lands they inhabit. Relations with the nature they handle, grow, breed, and live with. Our habits, especially concerning food, have developed in harmony with the nature of the various territories and this has influenced our way of life for millennia. Together with plant varieties and animal breeds we have shaped our culture, we have enhanced our capabilities in a dialectical relationship once founded on the respect and the awareness of being part of biodiversity itself. The food in particular is our closest connection with biodiversity and helps us to understand a fundamental part of its importance, because eating means transforming nature into culture. A fascinating and partly mysterious process, which is the basis of our existence. And food becomes the best way to understand what it means sacrificing biodiversity, seeking homologation, reducing everything in the name of productivity, so to impoverish even the size of our soul. With mass and industrial production applied to agriculture and food, we set off processes of biodiversity loss that have significantly reduced the variety of species and breeds that we eat. This is not only the loss of an important piece of nature, but also the loss of a part of us. Because also the knowledge related to cultivation, processing, natural rhythms, ways of consumption and conservation do disappear. It is a priceless heritage that once disappeared weakens us in our ability to create, innovate, find new paradigms for a future that seems increasingly uncertain. The fundamental mistake was to consider ourselves external to biodiversity, other than nature. To think that we could use it at will as if it were an infinite resource at our disposal, a simple factor of production, ignoring the infinite and also hidden connections that hold together our world and give it meaning. We cannot persevere in error: we must conserve biodiversity, of course, but we also need to relearn how to relate with it, so to derive mutual benefit and enjoyment. Carlo Petrini President of Slow Food International Chairman of the Management Board of the University of Gastronomic Sciences of Pollenzo Préface En observant l auditoire de Terra Madre, la rencontre mondiale des communautés de la nourriture que Slow Food organise tous les deux ans à Turin (à chaque rencontre plus de agriculteurs, pêcheurs, nomades, petits artisans, cuisiniers et cuisinières provenant de 153 nations du monde sont au rendez-vous), j ai renforcé ma conviction que la diversité est la plus grande force créatrice de l homme, qui nous permet de survivre, de nous adapter et de développer nos identités. En effet, l identité est en évolution constante, elle se forme uniquement grâce à l échange et ne se définit qu en fonction des différences. L identité n est pas, contrairement à ce que certains croient, un point fixe aux origines très lointaines et dont il faut défendre la pureté: à très long terme, elle se révèle comme le lieu par excellence du métissage et de la mutation. Les gens du réseau de Terra Madre, qui représentent bien une partie importante de la diversité humaine, ne seraient pas si variés et riches s ils n avaient pas entretenu des relations complexes avec d autres peuples et surtout avec la biodiversité des territoires qu ils habitent, avec la nature qu ils entretiennent, cultivent, élèvent, avec qui ils cohabitent. Nos habitudes, notamment en matière d alimentation, ont évolué en phase avec la nature des différents territoires, qui ne cesse d influencer nos styles de vie depuis des millénaires. Nous avons forgé notre culture, exalté nos capacités dans un rapport dialectique avec les races animales et les variétés végétales, autrefois fondé sur le respect et la conscience de faire partie intégrante de cette biodiversité. La nourriture représente notre connexion la plus étroite avec la biodiversité et elle nous aide à comprendre une partie fondamentale de son importance. Manger signifie transformer la nature en culture. Un processus fascinant et en partie mystérieux, qui est à la base de notre existence. La nourriture devient donc le meilleur moyen pour comprendre les effets de renoncer à la biodiversité, de miser sur l homologation, de tout réduire au nom de la productivité, jusqu à appauvrir la dimension de notre âme. La production sérielle et industrielle appliquée même à l agriculture et aux aliments a mis en place des processus de perte de la biodiversité qui ont significativement réduit la variété d espèces et de races constituant la nourriture de l homme. Il ne s agit pas seulement de la perte d une partie importante de la nature, mais également d une partie de nous-mêmes, puisque les connaissances liés à l exploitation et la transformation des sols, aux rythmes naturels, aux modes de consommation et de conservation disparaissent. Il s agit d un patrimoine inestimable dont la disparition affaiblit la capacité de l homme de créer, innover, trouver de nouveaux paradigmes pour un avenir qui apparaît des plus incertains. L erreur de fond a été de nous considérer comme extérieurs à la biodiversité et à la nature, penser que nous pouvions utiliser la nature à notre gré comme s il s agissait d une ressource infinie et à notre complète disposition, un simple facteur de production, ignorer les connexions infinies et cachées qui étayent notre monde et lui donnent du sens. Nous ne pouvons persévérer dans l erreur: il faut préserver la biodiversité, certes, mais il nous faut également réapprendre à nous rapporter avec elle, pour en tirer un avantage et un plaisir réciproques. 3 4 Biodiversità Il concetto di diversità biologica ha basi intuitive: chiunque abbia osservato un prato fiorito in primavera sa bene quale straordinaria varietà di specie vegetali vi si rinvenga; ci meravigliamo delle coloratissime visioni da acquario tropicale offerte dai filmati sulla Grande Barriera australiana, o dalla varietà di forme degli insetti o dalla varietà di suoni degli uccelli che abitano la foresta amazzonica. Così, come avviene per altre espressioni del genere, nate più per trasmettere idee o impressioni generiche al grande pubblico che per comunicare fatti precisi ai membri della comunità scientifica, anche il termine biodiversità presenta connotati elusivi e di non facile definizione, soprattutto a livello operativo. Definizioni Questo concetto, in ogni modo, ha radici molto più vecchie del nome usato oggi per definirlo. Fin dagli anni 30 gli ecologi avevano, infatti, iniziato ad elaborare diversi tipi di indici, detti appunto di diversità, destinati a consentire di compiere confronti fra popolamenti animali o vegetali di diverso genere, ma più spesso a livello di comunità. Ben noti sono ad esempio quelli di Margalef, di Kulczinsky, di Jaccard, di Shannon, di Piélou e molti altri. Alcune comunità presentano un maggior numero di specie, altre comunità possono esser completamente dominate da una singola specie comune cui se n aggiungono poche più rare. Tali indici, compresi quelli di cosiddetta equitabilità, che esprimono la modalità di distribuzione dei singoli individui nelle varie specie, furono appunto creati inizialmente per compiere questo genere di confronti fra situazioni caratterizzate da vari livelli diversità biologica. L espressione diversità biologica fu infine contratta in biodiversità, forse per primo da Rosen nel progettare il National Forum on Biodiversity tenuto a Washington nel Col passare del tempo, e soprattutto in senso conservazionistico, tale concetto ha finito con l assumere un significato più ampio, come si evince dalle seguenti definizioni. La biodiversità include la varietà degli ecosistemi, da quella delle comunità all interno di un dato habitat a quella delle condizioni fisiche in cui esse vivono (Wilson 1992). La biodiversità comprende la varietà degli organismi a tutti i livelli, da quello della variabilità genetica entro una specie, a quello dei Generi, Famiglie e altre categorie sistematiche (OTA 1987, semplificato). La biodiversità rappresenta il risultato ultimo e complessivo dell evoluzione biologica sul Pianeta Terra. La misura e i livelli della Biodiversità Nasce così il problema di definire quale debba essere considerata l unità di base, il metro che dobbiamo impiegare per valutare della biodiversità. Sarà esso la comunità? (in altre parole quante comunità ci sono in questo o in questi ecosistemi?), la specie? (quante specie in queste comunità?), il gene? (quanti alleli in queste specie?), o forse tutto questo assieme? In realtà ognuna di queste entità può essere l unità di misura, secondo il tipo di studio che si sta conducendo, e molte altre ancora. Tutto dipende da problemi di scala. In base alle definizioni sopra riportate, però, dovrebbe essere chiaro che se da un lato il concetto di biodiversità può essere utilmente impiegato per indicare nel loro complesso gli aspetti più vari della biosfera del nostro Pianeta, dall altro la misurazione della diversità biologica di un area Biodiversity The concept of biological diversity has intuitive bases: anyone who has watched a flowery meadow in the spring knows what an amazing variety of plant species are found; we marvel at the colourful visions of a tropical aquarium offered by the films on the Great Barrier Reef in Australia, or the variety of forms of the insects or the variety of sounds of the birds that inhabit the Amazon rainforest. So, as with other expressions of this kind, created rather to transmit general ideas or impressions to the great public than to communicate specific facts to the members of the scientific community, even the term biodiversity has elusive connotations that are not easily defined, especially at an operational level. Definitions This concept, however, has much older roots than the name used today to describe it. Ecologists since the 30s had, in fact, started to develop different types of indexes, called precisely diversity indexes, intended to enable them to make comparisons between populations of animals or plants of different kinds, but more often at the community level. Well-known are those of Margalef, Kulczinsky, Jaccard, Shannon, of Piélou and many others. Some communities have a higher number of species, other communities may be completely dominated by a single common species to which a few more rarer ones may add. These indexes, including those of so-called equitability, expressing how the distribution of individuals occurs in various species, were in fact initially created to fulfill this kind of comparison between situations characterized by different levels of biological diversity. The term biological diversity was eventually contracted into biodiversity, perhaps first by Rosen in planning the National Forum on Biodiversity held in Washington in Over time, especially in a conservationistic sense, such a concept has ended up taking a broader meaning, as evidenced by the following definitions. Biodiversity includes the variety of ecosystems, from the communities within a given habitat to the physical conditions in which they live (Wilson 1992). Biodiversity includes the variety of organisms at all levels, from genetic variability within a species, to that of genera, families and other systematic categories (OTA 1987, simplified). Biodiversity is the final and total result of biological evolution on Earth. The Extent and Levels of Biodiversity So the problem rises of defining what should be considered the basic unit, the metre that we must use to assess biodiversity. Be it the community? (In other words how many communities are there in this or these ecosystems?), the species? (How many species in these communities?), the gene? (How many alleles in these species?), or perhaps all of this together? In reality each of these entities may be the unit of measurement, depending on the type of study that is being conducted, and much more. It all depends on scale issues. According to the above mentioned definitions, however, it should be clear that while the concept of biodiversity can be usefully employed to denote as a whole the various aspects of the biosphere of our Planet, on the other hand, measuring the biological diversity of an area (overall diversity) is practically impossible, given the incredible biological complexity of each site, even the smallest and seemingly most insignificant one. When ever can it be possible to know not only all the species of bacteria, fungi, plants and animals that inhabit a certain place, but also all the complex forms of interaction between them and even all their genes? In the words of Margalef (1974): The diversity of a complete system is essentially inaccessible and almost mythical. Biodiversité Le concept de diversité biologique a des bases intuitives: il suffit d observer un pré fleuri au printemps pour appréhender la variété extraordinaire d espèces végétales qu il accueille; nous nous émerveillons en voyant les visions très colorées d aquarium tropical offertes par les films sur la Grande Barrière de Corail australienne, ou la variété de formes des insectes ou de sons des oiseaux de la forêt amazonienne. Le mot biodiversité, né, comme d autres expressions similaires, pour transmettre des idées ou des impressions générales à l opinion publique, plus que pour communiquer des faits précis aux membres de la communauté scientifique, reste flou et difficile à définir, surtout en termes opérationnels. Définitions Cependant, ce concept a des racines bien plus anciennes que le nom utilisé aujourd hui pour le définir. Dès les années 30, les écologistes avaient commencé à élaborer un ensemble d indices, qu ils appelèrent les indices de diversité, permettant de comparer les peuplements animaux ou végétaux de genre différent, mais plus souvent au niveau de communauté. Les plus connus sont par exemple les indices de Margalef, Kulczinsky, Jaccard, Shannon, Piélou et bien d autres encore. Certaines communautés présentent un nombre élevé d espèces, d autres sont entièrement dominées par une seule espèce commune, à laquelle s ajoutent d autres plus rares. Ces indices, et ceux d équitabilité, qui expriment le mode de distribution de chaque individu dans les différentes espèces, furent créés initialement pour comparer les situations caractérisées par différents niveaux de diversité biologique. L expression biodiversité est la forme contracte de diversité biologique, utilisée la première fois probablement par Rosen pendant la préparation du Forum National sur la Biodiversité tenu à Washington en Avec le temps, et surtout dans une optique de conservation, ce concept a fini par assumer une signification plus vaste, comme le démontrent les définitions suivantes. La biodiversité inclut la variété des écosystèmes, de celle des communautés faisant partie d un habitat donné à la variété des conditions physiques où celles-ci vivent (Wilson 1992). La biodiversité comprend la variété des organismes à tous niveaux, de la variabilité génétique au sein d une espèce, à la variabilité des Genres, Familles et autres catégories systématiques (OTA 1987, simplifié). La biodiversité représente le résultat ultime et global de l évolution biologique sur la Terre. La mesure et les niveaux de la Biodiversité Quelle est l unité de base, la mesure à utiliser pour évaluer la biodiversité? Est-ce la communauté? (autrement dit, combien de communautés y a-t-il dans ce ou ces écosystèmes?), l espèce? (combien d espèces dans ces communautés?), le gène? (combien d allèles dans ces espèces?), ou peut-être toutes ces entités à la fois? En fait, chacune d entre elles peut être une unité de mesure, et beaucoup d autres encore, en fonction du genre d étude effectué. Tout dépend des problèmes d échelle. Cependant, sur la base des définitions ci-dessus, il devrait être clair que si d un côté le concept de biodiversité peut être utilement employé pour indiquer les aspects les plus variés de la biosphère de notre Planète dans leur ensemble, de l autre côté, la mesure de la diversité biologique d une zone (overall diversity) est pratiquement impossible, vu l incroyable complexité biologique de chaque site, même du plus petit et apparemment insignifiant. Sera-t-il possible un jour de connaître toutes les espèces bactériennes, fongiques, végétales et animales qui habitent un lieu et toutes les formes complexes d interaction entre elles, voire tous leurs gènes? Comme le dit Margalef (1974): La diversité

4 (overall diversity) è in pratica impossibile, stante l incredibile complessità biologica d ogni sito, anche del più piccolo e in apparenza più insignificante. Quando mai sarà possibile conoscere non solo tutte le specie batteriche, fungine, vegetali ed animali che abitano un certo luogo, ma anche tutte le complesse forme d interazione che fra loro occorrono e persino tutti i loro geni? Per usare le parole di Margalef (1974): La diversità di un sistema completo è in sostanza inaccessibile e quasi mitica. Gli studiosi normalmente tentano di ovviare a questa difficoltà, valutando il livello di biodiversità di una data area solo per uno o pochissimi gruppi d organismi. Possiamo ad esempio elencare tutte le specie d uccelli che nidificano in una zona, o tutte le farfalle che la abitano. Non è chiaro, però, fino a che punto questo o quel gruppo, ad esempio animale, possa davvero essere rappresentativo della diversità complessiva. Studi condotti sui Vertebrati, per esempio, hanno dimostrato che ogni gruppo riflette aspetti diversi della biodiversità, spesso con caratteristiche molto varie. Pertanto, scopo principale di molti progetti di ricerca è quello di confrontare la diversità computata per diversi gruppi animali o vegetali, o a varie combinazioni dei gruppi stessi, allo scopo di procedere ad una taratura, proponibile in linea generale, che sia coerente con le caratteristiche delle aree studiate. L origine della biodiversità La biodiversità presente sulla terra è ovviamente il risultato dell evoluzione biologica che ha caratterizzato il nostro pianeta. Da un punto di vista energetico, peraltro, ciò è stato reso possibile dal flusso d energia solare che giunge fino a noi. Qualora il Sole si spegnesse, la vita sulla terra cesserebbe rapidamente di esistere. Sappiamo dalla teoria ecologica che il 10% di tal energia passa agli organismi fotosintetici, il 10% della quale passa agli erbivori; il 10% passa a sua volta ai carnivori di 1 livello (es. ragni, o coleotteri carabidi), il 10% ai carnivori di 2 livello (es. uccelli insettivori), il 10% ai carnivori di 3 livello (es. falchi), e così via. Ciò significa che in termini di biomassa, possiamo dire di peso, ci si debba aspettare che si manifesti una sequenza dove al primo posto, come più rappresentate, si trovano le piante, al secondo posto batteri e funghi, e poi via di seguito i diversi gruppi d animali. In termini di numero di specie, tuttavia, la sequenza è spesso rovesciata: il numero totale di specie animali viventi sulla terra è molto più grande del numero di specie di piante. Il numero totale di specie batteriche è al momento inconoscibile, ma è probabilmente molto più grande, forse di vari ordini di grandezza, di tutte le piante e gli animali viventi. La variabilità nel tempo La terra su cui viviamo esiste da quasi cinque miliardi di anni. La vita vi è comparsa circa quattro miliardi di anni fa. Prima di allora, evidentemente, la biodiversità era uguale a zero e possiamo facilmente supporre che il numero di specie viventi abbia subito un incremento graduale. Ciò non significa, peraltro, che tale incremento sia stato costante nel tempo. Al contrario, i dati paleontologici disponibili mostrano chiaramente che la biodiversità animale ha seguito importanti variazioni nel corso del tempo. A periodi d aumento della biodiversità ne sono seguiti altri di stasi, o anche importanti estinzioni. Se, tra queste ultime, la più nota al grande pubblico è quella che segna il limite geologico fra il Cretaceo ed il Trias, quella cioè in conseguenza della quale sono scomparsi, fra l altro, i dinosauri, le estinzioni importanti sono state molte, e alcune di esse hanno avuto portata anche maggiore, almeno dal punto di vista dei numeri. La grande estinzione della fine del Cretaceo, infatti, ha coinvolto solo circa la metà delle specie che vivevano in precedenza, così come quelle che hanno segnato ad esempio la fine del Devoniano o quella del Trias. Al Scholars normally try to avoid this problem by assessing the level of biodiversity in a given area for only one or a few groups of organisms. For example, we list all species of birds that nest in an area, or all the butterflies that inhabit it. It is not clear, however, to what the extent this or that group, i.e. animals, can truly be representative of the overall diversity. Studies on vertebrates, for example, have shown that each group reflects different aspects of biodiversity, often with very different characteristics. Therefore, the main purpose of many research projects is to compare the differences computed for different groups of animals or plants, or various combinations of the groups themselves, in order to carry out a calibration, broadly proposable, which is consistent with the characteristics of the areas studied. The Origin of Biodiversity Biodiversity on Earth is obviously the result of biological evolution that has characterized our planet. From an energy point of view, however, this was made possible by the flow of solar energy that reaches us. If the sun went out, life on earth would cease to exist soon. We know from the ecological theory that 10% of this energy passes to photosynthetic organisms, 10% of which passes to the herbivores, 10% in turn passes the 1st level carnivores (e.g. spiders or carabid beetles), 10% to the 2nd level carnivores (e.g. insectivorous birds), 10% to 3rd level carnivores (e.g. hawks), and so on. This means that in terms of biomass, i.e. weight, we could expect that a sequence occurs in which at the first place, as best represented, there are plants, fungi and bacteria are at the second place, and then the different groups of animals to follow. In terms of number of species, however, the sequence is often reversed: the total number of animal species living on earth is much larger than the number of plant species. The total number of species of bacteria is currently unknowable, but it is probably much larger, perhaps by several orders of magnitude, than that of all living plants and animals. The Variability over Time The earth on which we live has existed for nearly five billion years. Life has appeared on it some four billion years ago. Before then, obviously, biodiversity was equal to zero and we can easily assume that the number of living species has undergone a gradual increase. This does not mean, however, that this increase has been constant over time. In contrast, the paleontological data available clearly show that the animal biodiversity has followed important changes over time (Fig. 1). Periods of increasing biodiversity are followed by others of stagnation, or even major extinctions. If, between the last, the best known to the general public is the one which marks the geological boundary between the Cretaceous and Triassic, namely that in consequence of which dinosaurs have disappeared, among others, important extinctions have been many, and some of them had even a greater extent, at least in terms of numbers. The great extinction at the end of the Cretaceous, in fact, involved only about half of the species that lived before, as well as those that marked the end of the Devonian, for example, or that of the Trias. On the contrary, the end of the Cambrian has seen the extinction of as much as 70% of the fauna, and the end of the Permian over 60%. These extinctions have occurred in all probability for a number of reasons, but it is believed they have been the result of planetary catastrophes. It is true, therefore, that the ecological upheavals caused by humans today have not yet generated effects of this magnitude, but it is also true that it would be good if the effects of humanity do not end up with having to be counted alongside those of the fall of an asteroid of some kilometres in diameter. d un système complet est essentiellement inaccessible et quasi mythique. L origine de la biodiversité La biodiversité présente sur la terre est évidemment le résultat de l évolution biologique qui a caractérisé notre planète. Du point de vue énergétique, par ailleurs, elle est rendue possible par le flux d énergie solaire qui arrive jusqu à nous. Si le Soleil s éteignait, la vie sur la terre cesserait rapidement d exister. La théorie écologique nous apprend que 10 % de cet énergie passent aux organismes photosynthétiques, dont 10 % passent aux herbivores; 10 % passent à leur tour aux carnivores de 1er niveau (par exemple araignées ou coléoptères carabidés), 10 % aux carnivores de 2e niveau (par exemple oiseaux insectivores), 10 % aux carnivores de 3e niveau (par exemple faucons), et ainsi de suite. Ceci signifie que, en termes de biomasse, ou de poids, une sorte de séquence semble se manifester avec à la première place les plantes, les plus représentées, à la deuxième les bactéries et les champignons et ensuite les différents groupes d animaux. En termes de nombre d espèces, toutefois, cette séquence est souvent renversée: le nombre total d espèces animales vivant sur la terre est beaucoup plus élevé que le nombre d espèces de plantes. Le nombre total d espèces bactériennes est actuellement méconnu, mais il est probablement beaucoup plus élevé, peut-être de plusieurs ordres de grandeur, que toutes les plantes et les animaux vivants. Les périodes d accroissement de la biodiversité ont alterné avec des périodes de stase, voire d extinctions importantes. Si l extinction la plus connue au grand public est celle qui marque la limite géologique entre le Crétacé et le Trias, suite à laquelle plusieurs espèces, dont les dinosaures, ont disparu, les extinctions importantes ont été très nombreuses, et certaines ont intéressé un nombre encore plus important d espèces. En effet, la grande extinction de la fin du Crétacé ou les extinctions qui ont marqué par exemple la fin du Dévonien ou du Trias n ont concerné que la moitié environ des espèces qui vivaient sur la Terre. La fin du Cambrien a marqué l extinction de 70 % de la faune et la fin du Permien de plus de 60 %.
