5 SAFETY PRACTICES & PRECAUTIONS IMPORTANT SAFETY NOTICE! Certai Liquid Propae dealers may fill liquid propae cyliders for use i the grill beyod cylider fillig capacity. This Overfillig may create a dagerous coditio. Overfilled taks ca build up excess pressure. As a safety device, the tak pressure relief valve will vet propae gas vapor to relieve this excess pressure. This vapor is combustible ad therefore ca be igited. To reduce this dager, you should take the followig safety precautios: 1. Whe you have your tak filled, be sure you tell the supplier to fill it to o more tha 3/4 (75%) of its total capacity. 2. If you ow or use a spare tak, or have a discoected tak, you should NEVER store it ear or uder the grill/cart uit or heat box, or ear ay other igitio or heat source. A metallic sticker with this warig is provided with the grill to remid you, your family ad all others who may use your BBQ grill of these safety precautios. Istall this sticker close to your barbeque grill. 3. Do ot store a full tak i direct sulight. WARNING! Do ot try lightig this appliace without readig the LIGHTING INSTRUCTIONS sectio of this maual. This grill is for outdoor use oly. WARNING! Push i ad tur the selected cotrol kob to HI/SEAR positio. Release the kob whe the burer lights. If burer does ot light i 4 to 5 secods, tur kob OFF ad wait 5 miutes before tryig agai so ay accumulated gas may dissipate. WARNING: IMPORTANT! Before each use, ispect the gas supply pipig or hose prior to turig the gas o. If there is evidece of cuts, wear, or abrasio, it must be replaced prior to use. Never leave the appliace uatteded durig use. Sticker WARNING Begi by isurig proper istallatio ad servicig. Follow the istallatio istructios withi this maual. Have your grill istalled by a qualified istaller. Have the istaller show you where the gas supply shut-off valve is located so that you kow where ad how to shut off the gas to the grill. If you smell gas, your istaller has ot doe a proper job of checkig for leaks. If the coectios are ot perfectly sealed, you ca have a small leak ad therefore a fait gas smell. Fidig a leak is ot a do-it-yourself procedure. Some leaks ca oly be foud with the burer cotrol i the ON positio ad this must be doe by a qualified techicia. Always follow lightig istructios. Lid must be opeed before lightig the grill. Check for gas leaks before lightig. Never lea over a ope grill whe lightig. Serious burs may result. Hot surfaces surroudig grill grates could cause serious burs. Always leave at least 18" clearace to combustibles aroud the grill. Never store a spare LP cylider uder or ear this uit. Never fill the tak beyod 3/4 full. A fire causig death or serious ijury may occur. Childre should ot be left aloe or uatteded i a area where the grill is beig used. Never allow them to sit, stad or play o or aroud the grill at ay time. Whe i use, portios of the grill get hot eough to cause severe burs. Do ot store items of iterest to childre aroud or below the grill, i the cart or masory eclosure. Never allow childre to crawl iside a cart or eclosure. Never attach or discoect a LP cylider, or move or alter gas fittigs whe the grill is i operatio or is hot. Clea ad perform geeral maiteace o the grill twice a year. Watch for corrosio, cracks, or isect activity. Check the regulator, hoses, burer ports, air shutter, ad veturi/valve sectio carefully. Always tur off gas at the source (tak or supply lie) prior to ispectig parts. 18 3

6 SAFETY PRACTICES & PRECAUTIONS After a period of storage or o-use (such as over the witer), the gas grill should be checked for gas leaks, deterioratio, proper assembly, ad burer obstructios before usig. Never let clothig, pot holders or other flammable materials come i cotact with or get too close to ay grate, burer or hot surface util it has cooled. Fabric may igite ad result i persoal ijury. Do ot heat uopeed food cotaiers as a build-up of pressure may cause the cotaier to burst. Always use a covered had whe opeig the grill lid ad oly do so slowly to allow heat ad steam to escape. Never lea over a ope grill. Whe lightig a burer, always pay close attetio to what you are doig. Be certai you are pushig the burer kob whe you attempt to light the grill. After lightig burers, make sure burers are operatig ormally (See page 19). Whe usig the grill, do ot touch the grill burer, grate, or immediate surroudig area as these areas become extremely hot ad could cause burs. Grease is flammable. Never operate the grill without a grease tray. Let hot grease cool before attemptig to hadle it. Avoid lettig grease deposits collect i the drip pa. Clea ofte. Do ot use alumium foil to lie drip pas or grill grates or radiats. This ca severely upset combustio air flow or trap excessive heat i the cotrol area. The result of this ca be melted kobs or damaged igitio compoets. Do ot operate with a damaged cord or plug or after the appliace malfuctios or has bee damaged i ay maer. Cotact the maufacturer for repair. Do ot let the rotisserie cord hag over the edge of a table or touch hot surfaces. Do ot use a outdoor cookig appliace for purposes other tha iteded. For persoal safety, wear proper apparel. Loose fittig garmets or sleeves should ever be wor while usig this appliace. Some sythetic fabrics are highly flammable ad should ot be wor while cookig. Oly certai types of glass, heat-proof glass ceramic, eartheware, or other glazed utesils are suitable for grill use. These types of materials may break with sudde temperature chages. Use oly o low or medium heat settigs accordig to the maufacturer s directios. WARNING! Spiders ad isects ca est i the grill burers, causig gas ot to flow through the burer. The gas will flow from the frot of the burer ito the cotrol pael. This is a very dagerous coditio which ca cause a fire to occur behid the valve pael, thereby damagig the grill compoets ad makig it usafe to operate. WARNING! Keep the area surroudig the grill free from combustible materials, trash, or combustible fluids ad vapors such as gasolie, charcoal or lighter fluid. Do ot obstruct the flow of combustio ad vetilatio air. WARNING! Never use the grill i widy coditios. If located i a cosistetly widy area (oceafrot, moutaitop, etc.) a wid break will be required. Always adhere to the specified clearaces as defied i the INSTALLATION sectio of this maual. Refer to the Grill Placemet sectio for details if fittig a wid break. 4

7 SAFETY PRACTICES & PRECAUTIONS Whe usig the side burers always use flat bottomed pas which are large eough to cover the side burer. Adjust the flame so that it heats oly the bottom of the pa to avoid igitio of clothig. Positio hadles iward away from ope edges of the uit to avoid burs associated with uitetioal spillovers. Hold the hadle of the pa to prevet movemet of it whe turig or stirrig food. For proper lightig ad performace of the burers keep the ports clea. It is ecessary to clea periodically for optimum performace. Clea the grill with cautio. Avoid steam burs; do ot use a wet spoge or cloth to clea the grill while it is hot. Some cleaers produce oxious fumes or ca igite if applied to a hot surface. Be sure all grill cotrols are tured off ad the grill is cool before usig ay type of aerosol cleaer o or aroud the grill. The chemical that produces the sprayig actio could, i the presece of heat, igite or cause metal parts to corrode. Never grill without the drip pa ad grease tray i place ad pushed all the way to the back of the grill. Without it hot grease could leak dowward ad produce a fire or explosio hazard. Do ot operate the grill uder u protected combustible costructio. Use oly i well vetilated areas. Do ot use i buildigs, garages, sheds, breezeway, covered structure or other such eclosed areas. This uit is for outdoor use oly. Do ot place griddle plates (some models oly) side by side o the grill or o top of the Ifrared Hybrid Burer. Do ot use the Ifrared Hybrid Burer o BGB-36 or BGB-48 models. Use o BH1-36 & BH1-48 models oly. If a cart uit is stored idoors, esure that it is cool, fold the side shelf dow, the push, ever pull, the grill ad ever push or pull o the side shelves. If LP, the cylider must be uhooked ad the LP cylider stored outside i a well vetilated area, out of reach of childre. Never use the grill i a widy area. Do ot locate, store or operate the grill o a iclied plae. Make sure you lock the castor wheels before operatig the grill. Do ot use charcoal or lighter fluid i the outdoor grill. Keep ay electrical supply cord, or the rotisserie motor cord away from the heated areas of the grill ad water (pools, foutais, puddles). Never use a deted or rusty LP tak. Keep the vetilatio opeigs of the cylider eclosure free ad clear from debris. Use oly dry potholders; moist or damp potholders o hot surfaces may cause burs from steam. Do ot use a towel or bulky cloth i place of potholders. Do ot let potholders touch hot portios of the grill or burer grate. Have a ABC rated Fire Extiguisher accessible ever attempt to extiguish a grease fire with water or other liquids. To avoid burs whe cookig, use log hadled BBQ tools. Do ot move the appliace durig its use. This uit is for outdoor use oly! Do ot operate i eclosed areas. This could result i carbo mooxide build-up which would result i ijury or death. Whe usig a grill, be sure that all parts of the uit are firmly i place ad that the grill is stable (ca t be tipped over). To put out flare-ups, adjust the cotrols to lower the temperature CALIFORNIA PROPOSITION 65-WARNING: The Burig of gas cookig fuel geerates some by-products which are o the list of substaces which are kow by the State of Califoria to cause cacer or reproductive harm. To miimize exposure to these substaces, always operate this uit accordig to the maual, esurig you provide good vetilatio whe cookig with gas. This outdoor cookig gas appliace is ot iteded to be istalled i or o recreatioal vehicles, trailers ad/or boats. Note: This product must be istalled by a licesed plumber or gas fitter whe istalled withi the Commowealth of Massachusetts. 5

10 INSTALLATION LOCATING GRILL/BUILT-IN CLEARANCES Importat! Before istallatio, remove shippig brackets from the grill. To do so, loose the 4 screws o the bottom sides of the grill which hold the brackets to the grill. Slide the shippig brackets off ad retighte the screws. Shippig Brackets LOCATION: FIG. 01 Whe determiig a suitable locatio take ito accout cocers such as exposure to wid, proximity to traffic paths ad keepig ay gas or electrical supply lies as short as possible ad away from heat sources. Locate the grill oly i a well vetilated area. Do ot build the grill uder overhead uprotected combustible costructio. Never locate the grill i a buildig, garage, breezeway, shed or other such eclosed areas. Durig heavy use, the grill will produce a lot of heat ad smoke. Esure there is adequate area for it to dissipate. If locatig the grill i a widy area, try to locate the grill so the prevailig wid will blow air at the frot of the grill as show i Fig. 02a. This will assist the grill i vetig hot air thru the back of the grill. I additio, this will help keep ay smoke from blowig at someoe who is cookig o the grill. If you have to locate the grill i a widy area where the prevailig wid is at the rear of the grill, a widbreak must be istalled. The widbreak should be made such that it will block wid from eterig the exhaust vet i the rear of the uit as show i Fig. 02b. Locatio of the widbreak relative to rear of the grill must adhere to the clearaces specified for combustible or o-combustible costructio as defied i these istructios. Refer to followig pages. As high-performace gas appliace, your grill requires sigificat amouts of air to support the combustio process. Your grill is desiged to take air i through the valve pael area, ad sed the exhaust products out through the exhaust gap at the rear of the hood. Usig your grill i widy coditios ca disrupt the proper flow of air though your grill, leadig to reduced performace, or i certai severe cases, causig heat buildup i the valve pael area. This ca lead to problems such as havig the kobs melt, or bur hazards whe the valve pael surfaces become too hot to touch. Durig high wid coditios, it is best if you do t use your grill. If you live i a area that is subject to frequet high wids, or a steady directioal wid, the the istallatio of a suitable widbreak may be advised. If you have a grillig cart, it is best to positio the uit so the prevailig wid blows ito the valve pael, thus supportig the proper airflow. Wids hittig the back of the grill directly are the most likely to cause problems, although wid blowig alog the exhaust gap i the rear ca also be problematic. Please ote that damage to your grill resultig from use i widy coditios, such as melted kobs or igiter wires, or valve pael discoloratio from heat build-up, are excluded from warraty coverage. 8

12 INSTALLATION LOCATING GRILL/BUILT-IN CLEARANCES Clearaces to No-Combustible Costructio*: A miimum of 3 clearace from the back of the grill to o-combustible costructio is required for the purpose of allowig the lid to ope fully. It is desirable to allow at least 6 rear ad side clearace to o-combustible costructio above the cookig surface for couter space. If you ll be usig the rotisserie optio, the space is essetial for motor ad skewer clearace. The grill ca be placed directly adjacet to o-combustible costructio below the cookig surface. Clearaces to Combustible Costructio**: Miimum of 18 (45,7cm) from the sides ad rear of grill must be maitaied to adjacet vertical combustible costructio, above the couter top level. You should take i accout that there is a large volume of heat, ad smoke will exhaust from the rear of the grill. This may discolor or damage uprotected areas (Fig. 04). Do ot istall uder uprotected combustible costructio without usig a fire safe vetilatio system. A 18 (45,7cm) miimum clearace must be maitaied uder the couter top to combustible costructio. The clearace ca be modified by a use of a isulated jacket. 10

Such material shall be cosidered combustible eve though flame-proofed, fire-retardat treated or surface-paited, or plastered. Importat! It is required that a miimum of (3) 10 sq. iches / 64,5cm 2 of vetilatio opeig be provided for both the left ad right sides, as well as the back of eclosure (Fig. 05), i order to safely dissipate ubured gas vapors i the evet of a gas supply leak. WARNING! Note specific built-i eclosure vetilatio requiremets. See text ad Fig. 05. GENERAL The grill is desiged for easy placemet ito built-i masory eclosures. For o-combustible applicatios the grill drops ito the opeig show i Fig. 05 ad hags from its side flages. A deck is ot required to support it from the bottom. Whe usig the isulated jacket i a combustible eclosure applicatio, see the bottom of Fig. 05. The isulatio jacket assembly must be supported from the bottom by a ledge o each side ad back or a solid deck. A carpeter s spirit level should be used to assure that the uit is level both frot-to-back ad side-to-side. If it is ot level, burer combustio may be erratic or the uit may ot fuctio efficietly for grease flow. If the floor is ueve or has a decided slope, re-levelig may be required after each movig of a freestadig uit. INSULATED JACKET: WARNING! Istallig this product ito a combustible eclosure without a isulated jacket could result i fire, property damage ad persoal ijury. If the grill is to be placed ito a combustible eclosure, a approved isulated jacket is ecessary. Isulated jackets are available from your dealer. Use oly the DCS isulated jacket which has specifically bee desiged ad tested for this purpose. Review the detail drawig show (Fig. 05) ad take ito accout the provisios show for gas lie hook-up clearace i the right rear corer. It is required that vetilatio holes are provided i the eclosure to elimiate the potetial build-up of gas i the evet of a gas leak. The supportig ledges or deck must be level ad flat ad strog eough to support the grill ad isulated jacket. The couter should also be level. 11

To coect the LP regulator/hose assembly to the tak/valve assembly, first make sure the mai valve o the tak is completely closed. Although the flow of gas is stopped whe the Type 1 system is discoected as part of of its safety feature, you should always tur off the LP tak mai valve (Fig. 09) after each use ad durig trasport of the tak or uit. Isert the regulator ilet ito the tak valve ad tur to the black coupler clockwise util the coupler tightes up. Do ot overtighte the coupler. Tur the mai tak valve o ad tur the burer cotrol valves o the uit to the HI positio for about 20 secods to allow the air i the system to purge. Tur valves off ad wait 5 miutes before attemptig to light the burers. To discoect the coupler, first make sure the mai tak valve is tured off. Grasp the coupler ad tur couter clockwise. The ilet will the disegage. Remove the ilet from the tak valve opeig if it has ot already doe so whe it disegaged. Your local LP fillig statio should be equipped with the proper equipmet to fill your tak. LP TANK REQUIREMENTS: A deted or rusty LP tak may be hazardous ad should be checked by your LP supplier. The cylider that is used must have a collar to protect the cylider valve. Never use a cylider with a damaged valve. Always check for leaks after every LP tak chage. The LP gas cylider must be costructed ad marked i accordace with the specificatios for LP gas cyliders of the U.S. Departmet of Trasportatio (DOT or CAN/CSA-B339) ad desiged for use with a Type 1 system oly. Do ot chage the regulator/hose assembly from that supplied with the uit or attempt to use a Type 1 equipped regulator/hose assembly with a stadard 510 POL tak/valve assembly. The gas coector must comply with the Stadard for Coectors for Outdoor Gas Appliaces & Maufactured Homes, ANSI Z21.75/ CSA The coectio must be o loger tha 6 (1820mm) i legth ad be suitable for outdoor istallatio. If you ited to operate your Built-i grill o LP gas utilizig a 20v lb Type 1 cylider, the the Built-i LP tak restrait must be istalled prior to iitial use of the grill. If you do ot have oe please cotact DCS Customer Care at (888) for iformatio o obtaiig oe. The followig steps will illustrate how to properly locate ad istall the LP tak restrait withi the Built-i eclosure. NOTE: The grill comes with the LP Regulator/Hose assembly istalled at the factory. The assembly, alog with the etire grill system, is leak tested. Do ot remove the Regulator/Hose assembly from the grill durig istallatio. The maximum distace from the ceter of the maifold cut out to the ceter of the tak restrait is 18 iches (45,7cm). Ceter of maifold cut out projected to floor of the islad. Ceter of Tak Restrait must be placed withi this area to avoid causig stress o the LP regulator hose coectio. 18 (45,7cm) max. 19 INSTALLATION GAS HOOK-UP STEP 1 Place the tak restrait i the islad (Fig. 11). STEP 2 Locate the tak restrait i the islad withi the recommeded area (Fig. 10 ad 12). STEP 3 Oce located, secure to the bottom of the islad usig all eight hole locatios provided o the restrait. Wood screws ca be used for woode floors or 1/4 ich diameter achor screws or bolts may be used if the floor is cocrete or masory (Fig. 13). STEP 4 Whe secure, place the LP cylider ito the tak restrait makig sure to seat the tak all the way dow, securely affixig the tak i the restrait (Fig. 14). 20 INSTALLATION LEAK TESTING IMPORTANT! GAS LEAK TESTING MUST BE CARRIED OUT BY AN QUALIFIED TECHNICIAN. GENERAL: Although all gas coectios o the grill are leak tested at the factory prior to shipmet, a complete gas tightess check must be performed at the istallatio site due to possible mishadlig i shipmet, or excessive pressure ukowigly beig applied to the uit. Periodically check the whole system for leaks, or immediately check if the smell of gas is detected. Before Testig: Do ot smoke while leak testig. Extiguish all ope flames. Never leak test with a ope flame. Make a soap solutio of oe part liquid deterget ad oe part water. You will eed a spray bottle, brush, or rag to apply the solutio to the fittigs. For LP uits, check with a full cylider. The valve pael must be removed to check the valves ad fittigs. Remove the kobs ad the safety valve kob, the remove the 2 screws which faste the valve pael to the uit (you will eed a Philips screw driver for this). Pull the valve pael outward ad uplug the wires from the igitio module. I the back of the uit remove the screws which hold the service pael i place. Remove the service pael. To Test: Make sure all cotrol valves are i the OFF positio. Tur the gas supply ON. Check all coectios from the supply lie, or LP cylider up to ad icludig the maifold pipe assembly. Apply the soap solutio aroud the coectio, valve, tubig ad ed of the maifold. Avoid gettig the soap solutio o or i the valve switches. Soap bubbles will appear where a leak is preset. If a leak is preset, immediately tur off gas supply, tighte ay leakig coectios, tur gas o, ad recheck. Check all the gas coectios at the base of the cotrol valves where they screw ito the maifold pipe. To check rotisserie burer ad safety valve the burer must be lit, the leak test the coectios located behid the service pael. If you caot stop a gas leak tur off the gas supply ad call your local gas utility, or the dealer you purchased the appliace from. Oly those parts recommeded by the maufacturer should be used o the grill. Substitutio ca void the warraty. WARNING! Do ot use the grill util all coectios have bee checked ad do ot leak. Check all gas supply fittigs for leaks before each use. Keep a spray bottle of soapy water ear the gas supply shut-off valve. Spray all the fittigs. Bubbles idicate leaks (Fig. 16 & 17). 21 INSTALLATION BURNER ADJUSTMENT GRILL BURNER AIR ADJUSTMENT: Each grill burer is tested ad adjusted at the factory prior to shipmet; however, variatios i the local gas supply or a coversio from oe gas to aother may make it ecessary to adjust the burers. The flames of the burers (except the rotisserie burer) should be visually checked ad compared to that of the drawig i Fig.18. Flames should be blue ad stable with o yellow tips (LP uits may have some yellow tippig), excessive oise or liftig. If ay of these coditios exist, check if the air shutter or burer ports are blocked by dirt, debris, spider webs, etc. Proceed with air shutter adjustmet. The amout of air which eters a burer is govered by a metal cup at the ilet of the burer called a air shutter. It is locked i place by a screw which must be looseed prior to lightig the burer for adjustmet. GRILL BURNER FLAME HEIGHT: Before begiig, esure the grill is OFF ad cool. To access the grill burer air shutters, first remove the grates ad radiats from the firebox, the remove the grill burer usig istructios show o page 31, Fig. 46. With a screw driver, loose the lock screw o the face of the air shutter slightly so that the air shutter ca be adjusted. To Adjust: 1. Be careful as the burer may be very hot. 2. If the flame is yellow, idicatig isufficiet air, tur the air shutter couterclockwise to allow more air to the burer. 3. If the flame is oisy ad teds to lift away from the burer, idicatig too much air, tur the air shutter clockwise. Reistall the U-burer, esurig the burer is level. Light the burer ad check the flame. If all is okay, remove the burer (CAUTION - burer may be hot, allow time to cool) ad tighte the air shutter screw. If ot repeat the above procedure to readjust the air shutter. LOW FLAME SETTING ADJUSTMENT: The valves o the grill feature a adjustable low settig. Due to fluctuatios i gas pressure, heatig value or gas coversio, you may feel it ecessary to icrease or decrease gas flow i the low positio. We do ot recommed adjustig the ifrared rotisserie burer. To Adjust: 1. Light the burer. 2. Tur the cotrol kob to the lowest settig (all the way couter-clockwise). 3. Remove the kob. 4. While holdig the valve shaft with pliers, isert a thi, flat tipped screwdriver ito the shaft ad while viewig the burer adjust to a miimum stable flame (Fig. 19). 24 USING THE GRILL LIGHTING INSTRUCTIONS TO LIGHT THE GRILL BURNER: Ope the grill lid ad/or remove the top grate cover from side burer (for BH1-48RS) before lightig. Tur all kobs to OFF. Tur the mai gas supply o. If you smell gas, shut-off gas supply ad call for service. Grill Lightig Istructios: The grill kob is coected to the electroic igitio module. Pushig i o the burer kob will activate the igitio module to get a spark.push i ad tur the selected burer kob to HI/SEAR positio. Release the kob whe the burer lights. If burer does ot light i 4 to 5 secods, tur kob OFF ad wait 5 miutes before tryig agai so ay accumulated gas may dissipate. Grill Match Lightig: If the burer will ot light after several attempts, the the burer ca be match lit. If you ve just attempted to light the burer with the igitio, allow 5 miutes for ay accumulated gas to dissipate. Keep your face as far away from the outdoor appliace as possible ad hold a paper book match over the hole located o the top left FIG. 26 FIG. 27 for burer o the left, or the right hole for the right burer (Fig. 26 ad Fig. 27). Push ad tur the cotrol kob which is cetered o the burer where the lit match is located, to SEAR. If the burer does ot light i 4 secods, tur the kob off, wait 5 miutes ad try agai. If burer does ot light i 4 to 5 secods, tur kob OFF ad wait 5 miutes before tryig agai for ay accumulated gas to dissipate. If the burer will ot light after several attempts, check the trouble shootig istructios o page 33. Side Burers Match Lightig: Hold a lit paper book match ear the burer ports, tur the cotrol kob couterclockwise to HI. Move your had immediately oce the burer is lit. Rotate the cotrol kob to the desired settig. Note: If you are usig propae gas, a slight pop or flash may occur at the burer ports a few secods after the burer has bee tured off. This extictio pop is ormal for propae gas. Side burers: Your side burer is equipped with burers typical of those used i restaurats. These burers are desiged for maximum cleaability ad cotrolability. The burer should ever be operated if the cap is ot i place (Fig. 29). Failure to follow the steps i the order show may cause the Flow Limitig Device to activate resultig i extremely low gas flow ad improper operatio. 1 2 SEAR OFF WARNING All kobs must be i the OFF positio before opeig LP tak valve. 25 USING THE GRILL GRILLING GRILL: Each grill sectio cosists of a large stailess steel burer, stailess steel heat baffles, a series of ceramic rods ecased i a stailess steel radiat, ad a stailess steel heat retaiig grate. Each burer is rated at 25,000 Btu/hr or 26,5MJ/h. Below the burers there is a stailess steel heat baffle which reflects usable heat upward ito the cookig area ad reduces temperatures of the drip pa below. Above the burers are stailess steel radiats which ecase the ceramic rods ad protect the grill burer ports from blockage (Fig. 30). FIG. 30 The grill is supplied with radiat ceramic rods. Because of the porosity of ceramic rods, performace is superior i the rods ability to capture heat as it rises from the grill burers. They also possess the thermal mass eeded for eve cookig performace. Flare ups are cotrolled because the radiat ceramic rods keeps grease from gettig to the flames ad igitig. The itese heat produced by this system produces true grilled flavor as fats ad juices are brought to the surface of the food ad caramelized. Discoloratio of the grates is ormal after use. DIRECT/INDIRECT COOKING NOTES: Direct cookig ivolves placig food o grates over lighted burers. Use this method for foods that take less tha 20 miutes to cook or to sear larger items at the start of the cookig process that will the be idirectly cooked to fiish. Place items o the preheated surface ad leave util they o loger stick. Turig too soo ad too ofte is oe of the most commo grillig mistakes. Never spray water o the grill or ito grease. The pateted Grease Maagemet System reduces flare-ups by chaelig grease away from the flame.
