2 Caesar Salad Prep Time: 30 minutes Cook Time: 15 minutes Total Time: 45 minutes Serving Size: 4-6 servings Ingredients For the Croutons 2 large garlic cloves 1 pinch of salt 3 tablespoons olive oil 1/2 French baguette cut up into cubes For the Salad 2 heads of romaine lettuce 1 large egg 3 tablespoons fresh lemon juice 1 garlic clove, crushed 1 pinch salt 1/2 teaspoon ground pepper 1 teaspoon Dijon mustard 8 cl olive oil Grated Parmesan cheese How To Prepare For the Croutons Combine garlic, oil, salt, and bread cubes in a bowl. Mix and put the cubes onto a baking tray and bake until the croutons are golden. This should take about 10 minutes. For the Salad First, bring a pot of boiling water to boil, add egg and cook for just 60 seconds...no MORE. Remove the egg from the water and let it cool off. Then, mix the lemon juice, garlic, salt & pepper, mustard in a bowl. Crack egg and add to these ingredients. Whisk until smooth. After that, slowly add the oil while constantly whisking again until smooth. To Serve Tear the romaine lettuce into pieces and add them to a large bowl. Add half the dressing, toss, add remaining dressing, Parmesan cheese, and croutons and toss again. Serve on chilled plates.

3 Sole fillets Ingredients for 6 persons 6 fillets of sole 1 large leek 2 carrots small pieces of celery 1 clove of garlic 1 onion 1 lemon salt and pepper 2 glasses of dry white wine 3 egg whites 3 tablespoons of fresh cream 1 bunch of parsley 1 sprig of thyme 1 bay leaf What to do First, put the fillets of sole in a large saucepan. Then, slice the leek, the carrots, the onion, a small piece of celery and the clove of garlic. Add a bunch of parsley, a sprig of thyme and a bay leaf. Next, cover with cold water and bring to the boil. Simmer for half an hour and add two glasses of white wine. After removing the fish fillets from the saucepan, add the juice of a lemon and whisked egg whites, then combine the mixture with the fish. Finally, bake at gaz mark 7 for about 25 minutes. To serve Before serving, cover with a hollandaise sauce. Serve with rice or steamed potatoes.

4 Gazpacho Prep Time: 30 minutes Chill: 1 hour Total Time: 1 hour, 30 minutes For 6 persons Ingredients: 1,5 kg tomatoes, peeled, seeded, chopped 2 cucumbers, peeled, seeded, chopped 1 small red onion, chopped 3 cloves of garlic, crushed 1 yellow sweet pepper 1 red sweet pepper 6 tablespoons olive oil 3 tablespoons red wine vinegar salt to taste a few basil leaves Preparation: Place the tomatoes, cucumbers, onions, garlic and peppers in a blender. Blend until the mixture is smooth. Once gazpacho is completely blended, pour it into a large non-metallic bowl. Stir in the oil and vinegar. Add salt and pepper to taste. Mix well, cover and refrigerate for at least 1 hour. Garnish with the basil leaves. Serve gazpacho chilled. Tip: The easiest way to peel tomatoes is to boil water in a medium saucepan. As soon as water boils, turn off heat and place the tomatoes into the hot water for 1 minute. Carefully remove hot tomatoes. Now, you can easily peel them.
