4 white navy beans (0,5 kg) 1 small duck - cut into 8 pieces pork stew meat (250 g) lamb stew meat (250 g) 2 medium onions (diced) 1 / 4 slab of bacon (cut into cubes) garlic (2 Tsp) spicy pork sausages (250 g) water (2 cl) red wine (2 cl) 12 black peppercorns 2 sprigs of thyme 4 bay leaves 1 Tsp dried fennel 1 sprig of rosemary salt 1. Place the beans in cold water and soak overnight. 2. The next day, place a heavy pot over medium heat and cook the duck pieces on both sides. 3. Remove the duck and set aside. Increase heat to high and add the pork. 4. Brown well, remove from the pot and set aside. 5. Brown the lamb. 6. Remove the lamb and set aside. 7. Preheat oven to 150 C. 8. Remove most of the fat, leaving just about 3 tablespoons in the pot. 9. Lower heat to medium and add the onions. 10. Cook and stir until onions soften about 7 minutes). 11. Add drained beans, bacon, garlic and herbs and replace the duck, pork and lamb. 12. Add the water and wine, cover and place in the oven for two hours. 13. Add the sausages and salt as desired. 14. Replace in the oven another hour.

5 50 g rice 100 g lettuce 1 Tomato (50 g) 2 tsp lemon juice salt; pepper 1 tsp oil grated rind of a lime 2 Tsp lime juice 2 egg yolks 1 tsp mustard 75 g low-fat yoghurt 300 g sole fillet 10 g butter 1. Cook the rice. 2. Wash and spin the lettuce dry. 3. Cut the tomatoes in slices and mix them together with the salad in a bowl. 4. Mix the lime juice with 2 Tsp of water, salt, pepper and oil. 5. Blend the lime rind and juice with the egg yolks, mustard, 6 Tsp of water, salt and pepper in a bowl 6. Turn the mixture at average temperature into a stiff cream with the whisk. 7. Add the yoghurt and correct the sauce if necessary. 8. Wash the fillet of sole and wipe it. 9. Add salt and pepper. 10. Fry it with butter at everage temperature on each side for 2-3 mn. 11. Blend the lettuce with the dressing. 12. Serve the sole fillet with the yoghurt hollandaise sauce, the rice and the salad.
