Whe usig this restaurat caliber appliace, use it with extreme care, as this type appliace provides itese heat ad ca icrease the accidet potetial. Basic safety precautios must be followed whe usig kitche appliaces, icludig the followig: Read this Use ad Care Maual thoroughly before usig your ew appliace. This will help to reduce the risk of fire, electric shock, or ijury to persos. Begi by isurig proper istallatio ad servicig. Follow the istallatio istructios which came with this appliace. Be sure to have a qualified techicia istall ad groud this appliace before usig. Have the istaller show you where the gas supply shut-off valve is located so you will kow how ad where to tur off the gas to the appliace. If you smell gas, the istaller has ot doe a proper job of checkig for leaks. You ca have a small leak ad therefore a fait gas smell if the coectios are ot completely tight. Fidig a gas leak is ot a do-it- yourself procedure. Some leaks ca oly be foud with the burer cotrol i the ON positio ad for your protectio it must be doe by a qualified service techicia. If by some chace a burer goes out ad gas escapes, ope a widow or a door to let the room air out. Do ot attempt to use the appliace or tur ay electrical switch o or off util the gas has had time to dissipate. Follow the istructios o page 1, For your safety if you smell gas. This appliace has bee factory assembled for atural or LP gas. It should be correctly ad justed from the factory. Do ot repair or replace ay part of this appliace uless it is specifically recommeded i this maual. All other servicig should be referred to a qualified techicia. Childre should ot be left aloe or uatteded i a area where appliaces are i use. They should ever be allowed to tur kobs, push buttos, sit or stad o, ad/or touch ay part of a appliace while i operatio. Childre i walkers, or childre crawlig ca be attracted to the roud ove door hadle ad may grab ad ope the ove door. This ca result i ijury from the door beig pulled ope o a child, or severe burs if the ove is i use ad hot. WARNING! Do ot store items of iterest to childre above or at the back of ay appliace. Childre could be seriously ijured if they should climb oto the appliace to reach these items. Never store aythig i the ove or o the cooktop. Flammable materials ca catch fire, plastic items may melt or igite ad other types of items could be ruied. Do ot hag articles from ay part of the appliace or place aythig agaist the ove. Some fabrics are quite flammable ad may catch o fire. If the appliace is ear a widow be certai the curtais do ot blow over or ear the cooktop burers; they could catch o fire. Do ot use water o grease fires. Tur all burers OFF, the smother fire with bakig soda or use a dry chemical or foam-type fire extiguisher. Never let clothig, pot holders, or other flammable materials come i cotact with, or too close to, ay burer or burer grate util it has cooled. Fabric may igite ad result i persoal ijury. Be certai to use oly dry pot holders: moist or damp pot holders o hot surfaces may cause burs from steam. Do ot use a towel or other bulky cloth or frayed cloth i place of pot holders. Do ot let pot holders touch hot burers, or burer grates. For persoal safety, wear proper apparel. Loose fittig garmets or hagig sleeves should ever be wor while usig this appliace. Some sythetic fabrics are highly flammable ad should ot be wor while cookig. 3

This trapped heat ca upset the cookig perfor mace ad ca damage the fiish of the ove or the cooktop parts. WARNING! NEVER cover ay slots, holes or passages i the ove bottom or cover a etire rack with materials such as alumium foil. causig a fire hazard. Alumium foil liigs may trap heat, This appliace is for cookig. Never use the ove or cooktop to warm or heat a room. This could damage the cooktop or ove parts. WARNING! NEVER use this appliace as a space heater to heat or warm the room. Doig so may result i carbo mooxide poisoig ad overheatig of the ove. Whe usig the cooktop: Do ot touch the burer grates or the immediate surroudig area. Areas adjacet to the burers may become hot eough to cause burs. Whe usig the ove: Do ot touch the iterior surfaces of the ove, the exterior area immediately surroudig the door or the back trim. The drip tray hadles directly above the ove door may be hot if the ove has bee operated with the door ope, or if somethig has preveted the door from sealig. Always use cautio whe pullig out the drip trays (GD & GL models oly) whe the ove has bee o, or is curretly o. The drip trays get hot whe the ove is o. Do ot remove drip trays util they are cool. Never leave the cooktop uatteded whe usig high flame settigs. Whe cookig with high flame settigs, boil overs cause smokig ad greasy spill overs that may igite. More importatly, if the burer flames are smothered by a severe boil over which effects the igiter, ubured gas will escape ito the room. Oly certai types of glass, heat-proof glass-ceramic, ceramic, earthe ware, or other glazes utesils are suitable for cooktop use. This type of utesil may break with sudde temperature chages. Use oly o low or medium flames settigs accordig to the maufacturer s directios. The use of professioal utesils is recommeded. Do ot heat sealed food cotaiers; a build up of pressure may cause the cotaier to burst. Durig cookig, set the burer cotrol so that the flame heats oly the bottom of the pa ad does ot exted beyod the bottom of the pa. This could heat ad/or melt the hadles, ad may icrease cookig time. Always use utesils that have flat bottoms large eough to cover the burer. The use of udersized utesils will expose a portio of the flame to direct cotact ad may result i igitio of clothig. To miimize burs, igitio of flammable materials ad uitetioal spill overs, positio hadles of utesils iward so they do ot exted over adjacet work areas, cookig areas, or the edge of the cooktop. Hold the hadle of the pa to prevet movemet of the utesil whe stirrig or turig food. Grease Is Flammable. Let hot grease cool before attemptig to hadle it. Avoid lettig grease deposits collect aroud the cooktop burers. Clea after each use or boil over. For proper lightig ad performace of the cooktop burers, keep the burer ports clea. It may be ecessary to clea these whe there is a boil over or whe the burer does ot light, eve though the electroic igiters click Do ot use the grill for cookig excessively fatty meats or products which promote flare-ups. Do ot use cookig utesils o the grill. Clea the cooktop with cautio. Avoid steam burs; do ot use a wet spoge or cloth to clea the cooktop while it is hot. Some cleaers produce oxious fumes if applied to a hot surface. Follow directios provided by the 4

The chemical that produces the sprayig actio could, i the presece of heat, igite or cause metal parts to corrode. Place ove racks i desired positio while the ove is cool. If a rack must be moved while the ove is hot, do ot let the pot holders cotact the hot iterior of the ove. Use care whe opeig the ove door; let hot air or steam escape before removig or replacig foods. Do ot rub, damage, move or remove the door gasket. It is essetial for a good seal durig bakig. Wash gasket with hot water oly. Clea the vetilator hood ad filters above the rage or cooktop frequetly so grease from cookig vapors does ot accumulate o them. The filters ca be cleaed i a dishwasher or DishDrawer. Follow directios provided by vetilatio maufacturer for cleaig. Tur the vetilator OFF i case of fire or whe itetioally flamig liquor or other spirits o the cooktop. The blower, if i operatio, could usafely spread the flames. DO NOT obstruct the flow of combustio or vetilatio air to the appliace. Be sure a fresh air supply is available. For safety reasos ad to avoid damage to the appliace ever sit, stad, or lea o the ove door or cookig surface. Service should oly be doe by authorized techicias. Techicias must discoect the power supply before servicig this appliace. WARNING! Califoria Propositio 65 - The burig of gas cookig fuel geerates some by-products which are kow by the State of Califoria to cause cacer or reproductive harm. Califoria law requires busiesses to war customers of potetial exposure to such substaces. To miimize exposure to these substaces, always operate this uit accordig to the istructios cotaied i this booklet ad provide good vetilatio to the room whe cookig with gas. recommedatios o hook-up to gas supply: A maual valve must be istalled exteral to the appliace, i a accessible locatio from the frot for the purpose of shuttig off the gas supply. The supply lie must ot protrude beyod the back of the uit. Make sure the gas supply is tured off at the wall valve before coectig the appliace. The gas supply coectios should be made by a qualified techicia ad i accordace with local codes or ordiaces. I the absece of a local code, the istallatio must coform to the latest editio of the Natioal Fuel Gas Code ANSI Z NOTE: This product must be istalled by a licesed plumber or gas fitter whe istalled withi the Commowealth of Massachusetts. 9 before usig your appliace 1. Remove all packagig materials ad labels from your appliace. If the istaller has ot set up your appliace, do it ow. Regardig use of alumium foil i a DCS Rage Ove: Do ot use alumium foil to cover the ove racks or to lie the ove. Heat ca be trapped beeath the foil; this ca cause damage to the ove ad cause food to ot cook correctly. 2. Place the ove racks i the proper positio before turig o the ove. For correct rack positio check your recipe. The most frequetly used positio is umber 2. The rack positios are umbered from the bottom as i the floors of a buildig. (Fig. 01) Rack Positios Fig. 01 7

10 before usig your appliace 3. Before bakig or broilig: Oe at a time, tur the ove ad broiler burers o for 20 to 30 miutes each. This burs off the maufacturig oils used by the factory. Tur the ove burer o to 450ºF ad the broiler burer o to Broil. Tur o a vetilator above your rage while these burers are o, as there may be a odor. To isert the ove racks IN 12 OVEN: 1. Hold the rack with the back safety rail i the up positio ad towards the rear of the ove. Slip it ito the ove so the rack slides are betwee the rack ad the rack guides. 2. As you slide the rack ito the ove tip the frot of the rack up slightly, so that the safety stops o the back of the rack, clear the rack slides (see Fig. 02). The safety stops keep the rack from slidig out of the ove whe pulled forward. To isert the ove racks IN 24 AND 27 OVEN: 1. Hold the rack with the back safety stop i the up positio ad towards the rear of the ove. Slip it ito the ove so the rack rails egage ad ride o the rack rollers. 2. As you slide the rack ito the ove, tip the rack up slightly (see Fig. 03), so that the safety stops o the back of the rack slide over the rollers i the ove. The safety stops keep the rack from slidig out of the ove whe pulled forward. To remove or repositio the racks: 1. 11 cooktop use burers Your ew professioal gas rage is equipped with burers typical of those used i restaurats. These burers are desiged for maximum cleaability ad cotrollability. The large cap spreads the simmer heat out to avoid too much heat beig cocetrated o the ceter of the pa. The simmer flame is always o whe the burer is i use. The burer should ever be operated if the cap is ot i place. All the cooktop burers have electroic spark igitio to elimiate cotiuously burig pilots; whe the burer is o ad the flame is blow out, it will relight. Simmerig Your ew professioal cooktop has exceptioally low simmerig capabilities. The large cap serves as a heat diffuser to spread out the heat to avoid havig a ceter hotspot. Keep i mid that because of the high heat capacity of the retetio flame, ad the mass of the cast iro burer grates (they retai heat loger tha lighter, covetioal grates) some foods may cotiue to cook by retaied heat after the burer has bee tured off. 12 cooktop use Electroic Igiters If a burer does ot igite, liste for the clickig soud. If the igiter is ot clickig, TURN OFF THE BURNER. Check the circuit breaker for a blow fuse or a tripped circuit breaker. If the igiter still fails to operate, see page 34, Before Callig For Service. To light the burer maually, see page 29, Power Failure. NOTE: If you are usig propae gas, a slight pop or flash may occur at the burer ports a few secods after the burer has bee tured off. This extictio pop is ormal for propae gas. Igiter (Keep Clea) Fig. 05 Burer Efficiecy ad Flame Characteristics It is ecessary to keep the burer ports ad the igiters clea for proper lightig ad efficiet performace of the cooktop burers (Fig. 05). The burer flame should bur completely aroud the burer with o excessive oise or liftig. The flame should be blue i color ad stable with o yellow tips. A improper air-gas mixture may cause either a burer flutter or a yellow tipped flame. Durig iitial Proper Flame Height use, foreig particles i the gas lie, or dust i the air aroud the appliace may cause a orage flame. This will disappear with use. Flame Height The correct height of the flame maily depeds o the size of the bottom of the cookig utesil, the material of the cookig utesil, the amout ad type of food ad the amout of liquid i the utesil. Followig are some basic rules for selectig flame height. For safety reasos the flame must ever exted beyod the bottom of the cookig utesil. Never allow flames to curl up the side of the pa (see Fig. 06). This will discolor or damage the utesil. Fig. 06 Utesils which coduct heat slowly (such as glass-ceramic) should be used with medium to low flame. If you are cookig with a large amout of liquid, a slightly larger flame ca be used. COOKtop BURNERS The cooktop burers must be kept clea. Cleaig of the cooktop burers should iclude the igiter. The cooktop burers have a ifiite umber of heat settigs ad there are o fixed positios o the cotrol kobs betwee HI ad LO. To tur the cooktop burer o, push i o the cotrol kob ad tur it couterclockwise to the LITE positio. A audible clickig soud will be heard. Whe the gas has bee igited by the electroic spark igiter, tur the kob to the desired settig. (The clickig soud should stop as soo as the burer is lit). WARNING! Whe turig o ay cooktop burer, be sure to stop at the LITE positio before turig the burer to a flame settig for cookig. If the burer is ot lit ad it is tured beyod the LITE positio, to HI, MEDIUM, or LO, there could be a burst of flame whe the burer does light. 10

13 cooktop use Burer Grates The burer grates are heavy cast iro. They have a flat surface makig it easy to move large pas from oe burer to aother. They were desiged i sectios to make them easier to remove ad clea (See Fig. 07 & 08). cookware For best results we recommed usig professioal cookware. This type of utesil ca be foud at Fig. 07 (305 & 485 models) your fier departmet stores, specialty cookig shops, or restaurat supply stores. If usig regular cookware, be very careful if the pas have plastic hadles, as these large professioal size burers ca flame up o the outside of the pa ad melt or bubble the hadles. CONTROL KNOBS The cotrol kobs are readily associated with the burers they cotrol. The cooktop cotrol kobs are labeled ad are i frot of the burers. The ove cotrol is placed slightly lower tha the other cotrol kobs (Fig. 09). This is due to the physical size of the commercial type thermostats used o the product. Fig. 08 (36 & 48 models) Fig.09 wok rig (Purchase separately) A Wok rig is available as a accessory for your ew DCS appliace. To purchase a wok rig accessory (model # WRS) for use o your rage or cooktop please cotact a authorized DCS Dealer. The rig is cast iro, ad has a porcelai eamel fiish. It ca be used with the DCS model CW wok ad most commercially available woks. To use the rig, place it o the grate over the desired burer. The vertical tabs o the rig should be aliged with the mai figers of the grate. The small protrusios o the bottom surface of the rig should straddle the grate figers to prevet the rig from rotatig durig cookig. See Fig.10. The bottom of the wok should be supported ad retaied by the vertical tabs of the rig. For best performace o 305, 36 ad 48 model rages, the rig ad wok should be used o the burers that are i positios 1,4,5, ad 6 (see page 9) as they have the highest output o the top sectio. To clea the wok rig, place it i the dishwasher after use. Stubbor food deposits may be removed by soakig to loose the soil, the washig as usual. Fig

14 grill use Grill The two grill grates are reversible (see Fig.11). The grill grates are made of durable stailess steel. Oe side of the grate is ridged (side A) ad should be used for foods where you wat the fat to ru off, such as steak or hamburger patties. The ridges are slopped so the fat rus toward the frot of the grill ad ca easily ru dow to the cooler area of the drip tray ad away from the itese heat of the burer. The other side of the grate (side B) is desiged for foods that eed more support while cookig, such as fish ad vegetables. Food cooked o the grill sectio achieves the same flavor as food cooked o a outdoor grill. The itese radiat heat from the ceramic rods caramelizes the fats ad juices that are brought to the surface of the food, givig it the barbecued flavor. electric glow igiter The grill burers are equipped with a electric glow igiter ad safety valve system which lights the gas. There will be a delay of 30 to 90 secods after the cotrol kob has bee tured o to whe you actually hear the burer come o. The burer will igite withi 4 secods after the gas reaches the burer. NOTE: This gas grill may cook slightly faster tha you are used to, thus preheat ad grillig times should be adjusted accordigly. Side A Side B ceramic rods The layer of ceramic rods, uder the grill grates, will last for may years with proper care. They are shipped from the factory pre-assembled i the radiat tray, ready to be set i place ito the fire box, uder the grill grates. Be sure to remove ay packagig material from the radiat tray ad rods before usig the grill. Bured food particles ad ash ca be emptied off the radiat tray whe cool by shakig over a waste receptacle. Chippig or crackig of the ceramic rods may occur as they may get brittle with age, depedig o frequecy of use. This is ormal ad does ot affect the cookig performace. Do ot replace the radiat tray/ceramic rods with alterates. Cotact DCS for geuie factory-direct replacemet parts, or see page 1 for cotact iformatio. Fig. 11 use of the grill Before startig to cook o the grill, be sure the drip tray ad liers are i place ad that you have the grill grates tured to the side you wat for grillig. Preheat the grill for 15 miutes with the cotrol kob set o HI. Place the food o the grill. Grill it to the doeess desired. The cotrol kob may be set to ay positio betwee HI ad LO. For proper searig ad browig, the grill requires high heat. With large pieces of meat or poultry, you may eed to tur the heat to medium to low settig after the food has bee seared. This lower heat settig will allow the food to cook through without burig the outside. Whe usig a sugary mariade or barbecue sauce, it may be ecessary to tur the heat settig dow ear the ed of the grillig time. Do ot leave the grill uatteded while it is tured o. Whe you are fiished grillig, allow the drip trays to cool before cleaig them. They should be cleaed each time they are used. NOTE: The loger you preheat the grill, the darker the grill marks will appear. Excessive Flare Ups ad Flamig Occasioally grease drippigs igite. These drippigs will create mior puffs of flame for a secod or two. This is ormal whe cookig o a grill. You may fid it hady to have a spray bottle filled with water to lightly spray the flare-up. If the flame becomes excessive, remove the food from the grill. Lower the heat settig. Replace the food whe the flare-up subsides. To prevet flare-ups from happeig, trim the fat from aroud the edges of steaks ad chops, use hamburger that is lea, remove the fat that is o poultry, etc. Whe turig ay kid of meat or poultry, the melted fat will drop oto the ceramic rods ad it may create a flare-up. If this happes, use a log hadled spatula to move the food to aother area. 12

The doeess of meat is affected by the thickess of the cut. It is impossible to cook a thi piece of meat to a rare doeess. A steak should be at least 1-ich thick to have it tur out rare ad juicy. The cookig time is affected by the temperature of the meat whe you start to cook it, the size ad shape of the cut ad the kid of meat you are cookig. The degree of doeess desired also affects the time. Whe turig the meat over, always use a spatula or togs as it will ot pucture the meat allowig the juices to ru out. This will help to keep the meat juicy. Tur the meat oly oce, as juices are lost whe the meat is repeatedly tured. Be sure to trim ay excess fat from meat or poultry. To prevet steaks or chops from curlig while they are beig cooked, slit the fat aroud the edges at about 2-ich itervals. To test for doeess, make a small cut i the ceter of the meat. griddle use The built-i griddle o your cooktop is made from Type 304 stailess steel, highly polished to provide a smooth cookig surface. It is ormal for it to darke with use as oils cook oto the surface to provide a stick resistat base or seasoig. Sice the griddle is made from stailess steel, the surface will ot rust. The griddle burer is thermostatically cotrolled ad cycles o ad off to maitai the set temperature. The Heatig light idicates that the burer is ON. The Ready light idicates that the griddle is at the set temperature. The griddle assembly is ot to be removed for cleaig ad is held i place by two frot screws ad oe rear screw. These are maily there to keep the griddle from shiftig i trasit, thus avoidig breakage of ay igitio compoets. Oce the uit is istalled, the rear shippig screw ca be removed. It is located beeath the griddle flue cover which is removed by liftig off (be careful ot to scratch your backguard durig removal of the cover). Remove the ceter shippig screw. The two outer screws are levelig screws (Fig.12). They ca be tured to level the griddle or to provide a forward slope to help grease ad oils drai away from the food beig cooked. After usig the griddle a few times, you will be able to judge the slope best for the foods you are cookig ad your persoal preferece. electric glow igiter The griddle burers are equipped with a electric glow igiter ad safety valve system which lights the gas. There will be a delay of 30 to 90 secods after the cotrol kob has bee tured o to whe you actually hear the burer come o. 16 griddle use before usig the griddle for the first time or to re-seaso 1. Clea the griddle thoroughly with hot, soapy water to remove ay protective coatig. 2. Rise with a mixture of 1 cup water ad 1/4 cup white viegar. Dry thoroughly. 3. Pour 1 teaspoo vegetable oil ito the ceter of the griddle (do ot use cor oil as it gets sticky). Rub the oil over the etire surface of the griddle usig a heavy soft cloth. 4. Tur the cotrol kob to a Medium settig (350ºF). Tur the heat OFF whe the oil begis to smoke. Allow the griddle to cool. 5. Repeat Step 3. Be sure to cover the etire surface with the oil. 6. Repeat Step 4. Allow the griddle to cool. Wipe the etire surface of the griddle usig a heavy soft cloth. Apply a very thi layer of vegetable oil. The griddle is ow ready to use. If the griddle is ot used for a period of time, re-seaso it occasioally. O the RDT 305 models, the 24 ove bakes at 3,700 watts. The 12 proofig ove (RDT 48 models oly) bakes at 3,700 Watts ad broils at 3,600 Watts. Ove Your ew ove ca be used i three cookig modes: covectio bake, traditioal bake, ad regular broil. To help you decide which way to cook your food read this iformatio first. Remember this is a ew ove ad the thermostat has bee checked for accuracy. Your old ove may have had a thermostat that over the years got a little hot or a little cold. Check your recipes for the correct time ad temperature. Use cautio whe usig your old oves time or temperature. You may have bee compesatig for your old ove beig out of calibratio. Preheatig is usually ecessary for foods baked at high temperature for a short period of time, i.e. drop cookies. Codesatio Durig ay cookig process there is a certai amout of moisture that evaporates from the food. The amout of moisture that codeses o the ove depeds o the moisture cotet of the food. The moisture will codese o ay surface that is cooler tha the iside of the ove, such as the cotrol pael or the top of the door. CAUTION! CONVECTION BAKING Covectio bakig is bakig with a fa at the back of the ove circulatig the hot air i a cotiuous patter aroud the food. This circulatig hot air heats ad brows the surface of the food more effectively tha i a stadard ove. This allows most foods to be cooked at lower ove temperatures or i less time, if baked at the regular temperature. The air is recirculated ad reheated. Ucovered, loger cookig foods such as large pieces of meat or other foods that ca be cooked i low sided bakig utesils or air leaveed foods, are where you will see the most savigs i cookig time. Usig multiple racks (3) at the same time will achieve a good time savig, as you ca cook more food at the same time. The umber of recipes requirig preheatig of the ove is reduced cosiderably because the heat reaches the food faster as the hot air circulates aroud the food. 18 ove use Settig the Ove The Covectio Bake mode is used for bakig, roastig or warmig usig oe, two or three racks. To use Covectio Bake, push the Covectio Butto (located o the cotrol pael) ad tur the cotrol kob to the temperature desired. Models RDT-484GG, RDT-485GD, RDT-486GL ad RDT-486GD have two oves. The ove o the left side ca be used for regular bake oly; simply tur the cotrol kob to the temperature desired. Covertig Recipes to Covectio Bakig Low-sided bakig utesils will give the best results as the hot air ca reach all sides of the food easier. The ove temperature ca be left the same as the recipe ad the food will be cooked i a shorter period of time. The temperature ca be lowered 25ºF ad the food will probably take the same legth of time to cook as the recipe states. If you fid that food is adequately browed o the outside, but ot doe i the ceter, lower the temperature aother 25ºF ad add to the bakig time. Whe reducig the temperature always check the food for doeess, a miute to two before the miimum time stated i the recipe, as time ca always be added. Some recipes will cook faster tha others. There is o way to predict exactly how log each recipe will take whe you covert it to covectio. Covectio will be easier to use after you have used it a few times as you will begi to uderstad the way it bakes. Selectig Utesils for Covectio Bakig Cookig by covectio does ot require ay specially desiged bakig utesils. You probably have may utesils i your kitche that are suitable to use. Whe choosig a bakig utesil, cosider the material, the size ad the shape as they all affect the bakig time, the palatability ad the appearace of the fiished product. Metal bakeware (alumium, steel ad cast iro) all result i the fastest cookig time ad the best ed product. Alumium pas work best for all types of baked goods. Whe bakig pies ad breads for the best browig, use a pa with a dark or dull fiish that absorbs heat. A shiy fiish works best for cakes ad cookies, sice it reflects some of the heat ad provides a more teder surface. Cookie sheets with oly oe lip will give the best results, as the heated air ca circulate all aroud the sides of the food. For roastig use the bottom of the broil pa ad elevate the meat o a metal roastig rack. Glass-ceramic or glass utesils do ot coduct heat as well as metal, but they ca be used. Use them for foods that do ot require a dark brow crust or crispig, such as soufflés. Baked items cook more quickly ad evely if they are idividually smaller i size, i.e. two or three small foods do better tha oe large piece. Whe sigle food items are baked, always ceter the food o the rack. If several foods are beig baked, space them evely o the rack or racks. To Get the Best Results Follow the recommedatios above. If usig large or commercial size bakig utesils, the food may take a few extra miutes as the air caot circulate as freely as it does with a smaller pa. BROIL Broilig is cookig by itese ifrared radiatio supplied by the broil elemet located at the top of the ove. Sice broilig is cookig by radiat heat, the covectio fa i the broil mode is disabled. Foods Suitable for Broil Top Browig: Casseroles, Breads Appetizers Meats Poultry Fish Settig the Ove for Broilig Tur the cotrol kob clockwise to the broil settig (see Fig. 13). Whe the Bake, Broil or Covectio Bake selector butto is pressed you will hear a coolig fa begi to operate ad feel a air curret above the ove door. This air curret serves to keep the cotrol area above the ove cooler durig ope door operatio. The coolig fa must be ruig for the broiler to operate. The heater elemet will heat. The Ove O idicator light will come o to let you kow that the broiler is curretly o. Durig the broilig process, the broil elemet produces such a itese heat that it will cycle o ad off to maitai a efficiet yet safe iterior cookig eviromet. This cyclig process is idicated by the turig o ad off of the HEATING ad READY idicator lights o the valve pael. All broilig must be doe with the ove door closed. This will isure the best i cookig perfor- 18

21 ove use mace while maitaiig a cool exterior surface for comfortable use. Whe checkig the doeess of food while broilig, leave the door ope oly log eough to check temperature or determie degree of doeess. Close door immediately after checkig the food. Preheatig For best results, it is recommeded that the ove be pre-heated with the door closed for approximately 10 miutes. Usig a Meat Thermometer to Broil Fig. 13 To accurately determie the doeess of a thick steak or chop (1-1/2 iches thick or more), use a meat thermometer. Isert the poit of the thermometer ito the side of the meat to the ceter. Cook the first side to 90ºF for rare meat. Cook the first side to 100ºF for medium to well doe. Cook the secod side to the desired degree for the doeess you wat, 135ºF to 140ºF for rare, ad 150ºF to 155ºF for medium ad 160ºF to 165ºF for well doe. If you are cookig pork, cook to 170ºF. A large two-piece broil pa comes with your ew rage. Whe you are broilig, always use both pieces. Do ot cover the grid with alumium foil. This slotted grid allows the grease drippigs to flow ito the bottom of the pa keepig it away from the itese heat of the ifra-red broiler burer. This helps to miimize the smokig ad spatterig of the grease. NOTE: Whe the ove is used for a exteded period of time at a high temperature, the coolig blower may tur o. This is ormal. The coolig blower will also operate durig Broil ad the Self-Cleaig cycle. If the blower is ot ruig durig these modes, do ot use the ove. Call a qualified appliace techicia to repair the uit. Broilig Rack Positio The rack positio depeds o the type ad thickess of the food. Thick pieces of meat or poultry would typically be broiled o rack positio 2 or 3. Steaks, chops ad hamburger would be broiled o rack positio 4 (top rack) for thier pieces ad positio 3 for thicker oes. If top browig casseroles or bread the thickess of the food would idicate the rack positio. Casseroles would typically be browed o rack positio 2 or 3 ad bread o rack positio 3. To Get the Best Results Defrost the food before startig to cook. set a miute timer for the miimum time to check the food. Steaks should be at least oe ich thick if a rare doeess is desired. It is difficult to get rare with meat that is thier, or to get a ice brow piece of meat. After half the total cookig time, tur the food over oly oce. It is ot ecessary to tur over thi foods (filet of fish, ham slices, etc.) Liver slices must be tured over. Whe top browig, use metal or glass-ceramic bakeware. DO NOT use heat-proof glass or pottery as this type of glassware caot withstad the itese heat of the broiler burer. Use a two-piece broil pa. Two-piece broil pas are desiged to miimize smoke ad spatter. DO NOT cover the slotted grid with alumium foil. This will catch the grease ad could cause a fire. The broiler pa should be placed all the way to the back of the ove ad cetered o the ove rack. All broilig must be doe with the ove door closed. This will isure the best i cookig performace while maitaiig a cool exterior surface for comfortable use. Whe checkig the doeess of food while broilig, leave the door ope oly log eough to check temperature or determie degree of doeess. Close door immediately after checkig the food. 19

22 ove use Usig the Ove for Slow Cookig or Low Temperatures The ove ca be used to keep hot food hot, to dehydrate food, to warm plates, for slow cookig (as i a crock pot), ad to defrost foods. You ca keep hot, cooked food at servig temperature. Set the ove to the temperature suggested i the followig chart (page 22). Rare meat must be eate whe it is removed from the ove, as it cotiues cookig from its ow heat. To keep food moist, it must be covered with alumium foil or a lid. To dehydrate food, follow suggestios i a recipe. To warm plates, check with the dishware maufacturer for the recommeded temperature. To use the ove as a slow cooker, set the ove cotrol kob to 225ºF, place the food i the ove i a pa with a tight fittig lid. Follow recipes for this type of cookig. To thaw ucooked froze food, set the ove cotrol kob to warm. Be sure the food is tightly wrapped i foil. Thaw the food just eough to hadle it. Cook immediately. Do ot refreeze. To thaw froze cooked food, set the ove cotrol kob to 170ºF. Loose the freezer wrappig. Do ot use plastic wrap or wax paper i the ove. FOOD SAFETY! Accordig to the Uited States Depart met of Agriculture you should ot hold foods at temperatures betwee 40ºF to 140ºF for loger tha 2 hours. High Altitude Bakig Recipes ad bakig times vary if you are bakig at a high altitude.
