Thierry Mingaud: From a cultural and historical logic between France and Francophone Africa, we went toward a logic of real economic development, supporting local growth and promotion. The kind of logic that benefits all our stakeholders: the airlines, their passengers, and airports, which enjoy the highest standards of quality and food safety from our units, to our local partners to whom we bring custom production tools, created site by site, as well as our production processes. Finally, to Servair which year after year asserts its position as leader on a continent with great potential for development. And in terms of operations? T.M.: Industrial food service, our core business, opens to us significant opportunities for diversification, like supplying off-shore platforms or outside-the-home consumption. Furthermore, we can also fortify our purchasing policy for fresh local products for the company. Finally, cost structure here is different from that of Western countries. This new site meets a demand of airline companies operating at Cotonou Airport and the Benin authorities who wish to benefit from an airport of international standing. Before our arrival, they operated at back catering or ordered meals from city hotels, explains Jacques Faye, Vice President for Servair Benin. Servair s offer enabled them to control costs, while providing them with more flexibility, as much in the selection of services offered as in order management. Servair is also renowned for its know-how and for its commitment to hygiene and quality issues, we therefore received a very warm welcome, adds Jacques Faye. L offre de Servair leur permet de maîtriser les coûts tout en assurant une plus grande flexibilité tant dans le choix des prestations proposées que dans la gestion des commandes. «Servair est également réputé pour son savoir-faire et ses engagements en matière d hygiène et de qualité, nous avons donc reçu un très bon accueil», ajoute Jacques Faye. Initialement conçu pour être un site d assemblage, le catering de Cotonou s est adapté à la demande de l environnement local pour intégrer l ensemble des étapes de la chaîne de production sur site.

It was therefore only natural for Servair to initiate an original operation with China Southern Airlines and the chefs of Guangzhou Nanland Air Catering in order to share the best of each cuisine!

5 be SERVAIR no. 05 / October Last April, a delegation of Servair chefs led by Michel Quissac, Corporate Chef, and Éric Augustine, Director of the Culinary Research & Development department, went to meet the chefs of Guangzhou Nanland Air Catering for a workshop the first of its kind! at the Baiyun International Airport, which is also the hub of China Southern Airlines (see "Servair s strategy developing in China" box). On the menu: three days of exchanging and sharing techniques, as well as French and Chinese culinary traditions, with Cantonese sous-chefs Huang Changsheng and Chen Ziming. To start, French and Chinese chefs presented, to 44 privileged guests (including directors for the Chinese airline), an exceptional dinner consisting of two different menus based on the same ingredients. A true testament to their respective know-how for a doubly gourmet dinner. En avril dernier, une délégation de chefs Servair emmenée par Michel Quissac, Corporate Chef, et Éric Augustine, directeur Recherche & Développement culinaire, est allée à la rencontre des chefs de Guangzhou Nanland Air Catering pour un workshop le premier du genre! à l aéroport international de Baiyun, également hub de la compagnie China Southern Airlines (lire l encadré «La stratégie de Servair en Chine»). Au menu : trois jours d échanges et de partage autour des techniques et traditions culinaires françaises et chinoises avec les sous-chefs cantonais Huang Changsheng et Chen Ziming. Dans un premier temps, chefs français et chinois ont présenté aux 44 convives privilégiés (dont des dirigeants de la compagnie aérienne chinoise) un dîner d exception composé de deux menus réalisés sur la base des mêmes ingrédients. Un véritable témoignage de leurs savoir-faire respectifs pour un dîner doublement gastronomique. «Il est forcément intéressant de capitaliser sur ce qui rapproche deux cultures gastronomiques mais aussi sur ce qui les différencie.» Élargir le champ des possibles L atelier organisé le jour suivant a mobilisé les chefs des deux pays pour perfectionner les menus «western» à la carte des premières classes et classe Premium des A380 de China Southern Airlines. Les plats ont été retravaillés avec les techniques des chefs de Servair avec l'aide et sous l œil attentif et vigilant des chefs cantonais. «L opération s est déroulée à la fois dans le respect de la tradition culinaire locale, de la maîtrise des standards internationaux en matière d hygiène et de qualité et des exigences de production spécifiques à notre métier», explique Vincent Maréchal, directeur général adjoint de Guangzhou Nanland Air Catering. Le résultat? 450 portions dégustation, soit 15 plats servis pour 30 personnes, ont été présentées à l occasion d une séance de travail et favorablement accueillies par les invités. «Les besoins de nos prestigieux clients comme China Southern Airlines évoluent rapidement. Ce type d opération est une façon d élargir le champ culinaire que nous leur offrons. Il est forcément intéressant de capitaliser sur ce qui rapproche deux cultures gastronomiques mais aussi sur ce qui les différencie», continue Vincent Maréchal. Stimuler la créativité Cette opération s est montrée d autant plus fructueuse qu elle a donné l occasion aux chefs de Servair de repartir avec de jolis éléments d inspiration pour le centre Jet Chef de Roissy-Charles de Gaulle,

Depuis, l expérience a d ores et déjà été renouvelée sur une autre terre gastronomique, à Nairobi, au Kenya. Servair really had a great idea in organizing this Franco-Chinese air catering event. The transfer of know-how was very rewarding for our chefs who were able to broaden horizons and hence develop new creativity and culinary inspirations. That their Servair counterparts used local ingredients to produce highly refined dishes proved to be a valuable experience. This allowed us to identify culinary techniques to improve the quality of our food while controlling costs more effectively. At the end of the day, this can only help to increase the satisfaction of our customers! Armed with this successful experience, we could collaborate regularly with Servair s good practices exchanges; their chefs can coach our chefs on western cuisine; we, on the other hand, can help them to improve their knowledge of Chinese cuisine! Meanwhile, we could also mutually support each other at major events. I am thinking specifically of the forthcoming opening of airlines or large international festivals at which Servair could bring us valuable recommendations in terms of French customer preferences and, conversely, we can advise them on the tastes of the Chinese public. I am convinced that together we can work to set up a service capable of always responding better to the needs of international customers. «Servair a vraiment eu une excellente idée d organiser cet événement culinaire franco-chinois. Ce transfert de savoir-faire a été très enrichissant pour nos chefs qui ont pu élargir les horizons et développer ainsi une nouvelle créativité, de nouvelles inspirations culinaires. Le fait que leurs homologues de Servair aient utilisé des ingrédients locaux pour réaliser des plats d un grand raffinement s est révélé une expérience tout à fait porteuse. En même temps, cela nous a permis d identifier des techniques culinaires pour améliorer la qualité de nos mets tout en maîtrisant mieux nos coûts. Au final, cela ne peut que contribuer à accroître la satisfaction de nos clients! Forts de cette expérience réussie, nous pourrions être amenés à coopérer régulièrement avec Servair sur des échanges de bonnes pratiques : leurs chefs peuvent coacher nos chefs sur la cuisine occidentale et, de notre côté, nous pouvons leur apprendre à améliorer leur maîtrise de la cuisine chinoise! Nous pourrions également être un appui réciproque sur de grands événements. Je pense notamment à l ouverture prochaine de lignes aériennes ou à de grands festivals internationaux sur lesquels Servair pourrait nous apporter de précieuses recommandations sur les préférences de la clientèle française et, réciproquement, nous pourrions les conseiller sur les goûts du public chinois. J ai la conviction qu ensemble nous pouvons travailler à la mise en place d un service capable de répondre toujours mieux aux attentes de la clientèle internationale.»

After a three-month pilot phase, as of July 1st, the company has offered five "à la carte" menus on routes from Charles de Gaulle, Orly, and the Overseas French Departments and Territories (DOM) in long-haul Voyageur and Premium Voyageur cabins. For a supplement of somewhere between 12 and 28 euros, a customer can opt for a traditional, organic, Italian, seafood ( Océan ) menu or a Selection Lenôtre. Direct sales to passengers is a food service designed in accordance with customer demand. And the initial feedback from Air France travelers is positive! La vente directe au passager, c est une conception de la restauration, en termes d exigence client. Il a également fallu mener un travail complexe pour interconnecter nos systèmes d information et ainsi permettre la prise de commande en ligne par le client.» Et les premiers retours des voyageurs d Air France sont positifs! Un partenariat qui a pour objectif d inscrire la compagnie dans une dynamique de progrès continu. Air Caraïbes Controlling costs with Servair Solutions ////////////// On October 15th, 2011, Servair Solutions won the services integration contract for Air Caraïbes, a partnership aimed at driving the company toward continuous progress. Since October, from food services, through the press, to equipment management, Servair Solutions has managed, the entire catering and inflight service of Air Caraïbes. Integration teams are involved in supporting and consulting the company for its transatlantic flights from Orly: to Cayenne, Fort-de- France, Pointe-à-Pitre, Port-au-Prince, Santo Domingo and Saint Martin. The dual challenge of defining this new Business offer was its compatibility with larger production volumes and cost control. We produce up to 850 Signature Guy Martin meals daily at Servair 1. Our response? To focus on the original flavors of the Signature Guy Martin main dish, and its consistency with the entire menu. Guy Martin s creativity and requirements did the rest! Is Guy Martin personally involved? Yes, of course. It was under his leadership that the R&D kitchen finalized the technical specifications for each recipe. And on training day for the 40 chefs from our Ile-de-France centers, he was able to appreciate their work and share his requirements for success in the field: a non-compliant dish stays put.
