L'année commence toujours par un banquet réalisé par les étudiants et reproduisant l'un des menus historiques de notre collection... Ce menu fut reproduit en 2009 au Charles Le restaurant d'application fut nommé Le Charles en hommage à Charles Bouvier, grand-père du fondateur de l'école, qui fut le chef de brigade du train présidentiel. Les menus qu'il a fait servir aux grands hommes de la fin du XIXème siècle décorent les murs de notre restaurant. Le Charles, ESHotel gastronomic restaurant, is named after Charles Bouvier, grandfather of the founder, who was Maître d of the presidential train. His collection of menus from the banquets he supervised at the end of the 19th century decorates our restaurant.
